In 2014, in an interview with Smithsonian magazine, Bourdain said people got the mistaken impression from his book that it was okay to get high at work and it isn’t. In the updated edition of Kitchen Confidential he says that most chefs today don’t tolerate the kind of behavior that went on at his past jobs, but he didn’t debunk anything or apologize.
Numerous professional chefs and others in the restaurant industry have confirmed that his accounts in Kitchen Confidential were accurate and truthful. If you have any specific quotes and sources to back up your comment, I’d love to see them.
